Chocolate Brownies


120g GF flour (I use doves plain mix)
15g Cocoa
280g caster sugar
1/2 tsp GF baking powder
120g margarine
2 beaten eggs

Mix all the dry ingredients. Melt the margarine (20 seconds in a microwave) and add to the mixture along with the eggs.  Pour into an oiled cake tin or a lipped baking tray lined with baking parchment or a silicone sheet.

Bake for 30 mins until a skewer comes out clean.

Variations: For a richer brownie add 100g melted plain GF chocolate and 70g chopped nuts.  Alternatively, add 1/4 tsp xanthum  to the dry ingredients for a slightly gooey texture.
